Over the next few weeks we would like to share some of our favorite recipes and tips with you for the holidays. We hope you enjoy them and as always have a safe and happy holiday season.

On the first day of Christmas Cayuga Mutual Presents to you Phil’s favorite Caramel Pecan Snowballs. These are absolutely delicious and turn a holiday favorite into an amazing cookie everyone is sure to enjoy.

Ingredients:

24 Caramel Pecan chocolates, cut in half

1 ½ cup sweetened flaked coconut

1 cup all-purpose flour

1 ¼ cup icing sugar

A pinch salt

6 tbsp. butter, softened

1 tsp. vanilla extract

4 tsps. milk

Directions:
Preheat oven to 350 degrees F.
Set aside 1 cup of coconut and 1 cup of icing sugar.
Grind remaining ½ cup of coconut in food processor. Add flour, ¼ cup icing sugar and salt. Pulse to blend. Add butter and vanilla and continue to pulse until a dough is formed.
Scoop 1 tbsp. balls of dough and flatten with your hands. Place half of a candy on the dough and top with another tbsp. of dough. Roll to form ball.
Place snowballs 1 inch apart on an ungreased cookie sheet and bake until firm, but tender (about 15 minutes). Move to cooling racks and cool completely.
Pour remaining cup of icing sugar into a small bowl. Stir in enough milk to form a smooth but think glaze. Dip cookies in glaze, and dip in chopped coconut. Move completed snowballs to plate and let dry completely.

Tip: speaking of snowballs, with winter season upon us make sure to clear your snow and make your steps and walkways safe for visitors. Some municipalities have bi-laws in place stating snow must be cleared usually within 48 hours of a snowfall. Make sure to check with your Cayuga Mutual Agent to ensure you have the right coverages for you.
